YELLOW RICE (Fried Rice)

Note: Tips for cooking fried rice

  • 2 cups of rice to three cups water;
  • 3 cups of rice to five cups of water
  • 4 cups of rice to 7 cups of water etc... i.e., the water should be one cup less than double the quantity of rice.
  • For larger quantities of rice, bake (covered) at 400°F for 1/2 an hour
  • For smaller quantities of rice, bake (covered at 340°F for about 1/2 an hour.

 

Ingredients

  • 1 cup rice
  • 1 large onion, sliced
  • 1 tbsp cooking oil
  • A few of each of the following spices: cloves, cardamom, peppercorns and cinnamon sticks.
  • 2 bay leaves
  • 1/2 tsp tumeric
  • Salt to taste

Method

Brown the onions well, and then add raw rice. Stir vigorously to prevent sticking. Add salt, spices, tumeric, salt, bay leaf. Add water in the proportions mentioned above. Cook (covered) on a gentle heat on stove top for ten minutes after the water comes to a boil. To prevent sticking, add small quantities of water on top of the lid from time to time.

If baking in the oven, follow the above mentioned instructions.

Garnish if desired with slivered almonds, raisins, and sliced hardboiled eggs.
